Frugal Snacks
Posted in Snacks | 2 Comments »This kids and I checked out this cookbook from the library this week. After looking through it, I was pretty impressed at all the healthy recipes in it.
We decided to try “The Sky is Falling Apples! Wraps”. We always seem to have leftover tortillas around, so it made it pretty frugal. All I bought for it was an apple. However, if I had remembered, I should have bought a banana, too. Anyway, here is how it went:
The Sky is Falling Apples! Wraps
1 small banana, peeled (we forgot)
1/3 cup crunchy peanut butter (we like creamy-$.40)
4 7-8 inch whole wheat or white flour tortillas (FREE if using leftover)
1 cup chopped apple ($.75)
TOTAL=$1.15 (We used it for a snack…these could go in lunchboxes during the school year….pretty in expensive!)
#1-Put the banana in a bowl and mash with a fork. Add the peanut butter to the mashed banana. Stir with a wooden spoon to mix.
#2-Use a table knife to spread peanut butter mixture over tortillas. (I scooped a big blob of peanut butter onto the kids’ tortillas and let them spread it.) Sprinkle with apple. (I let them do that, too). Tightly roll up tortillas. Use a sharp knife to cut each roll-up in half (I should have done this!). Wrap tightly in plastic wrap. Chill in the refrigerator for up to 24 hours.
